Bottles with history
For a lot of families, the wine has a history of its own.
Parents build a cellar over decades. A bottle gets put aside for a birth year, a good vintage, an anniversary, a trip. There's often a twenty-year-old Shiraz somewhere in it, or a single bottle of Grange, or a case bought years ago with a wedding already in mind.
Those bottles don't have to stay in the cellar. They can be opened at dinner, poured through the speeches, or shared quietly with the people they were bought for.

Quantities are worked out against guest numbers, the season, how long the day runs, how the drinks are served, the food, and how your particular group actually drinks.

Source and deliver
Buy it yourself, or ask your caterer or bar provider to put the order together. Either way it comes to the property rather than to somebody's garage, so nobody is driving a wedding-sized order down the Hume on the Friday.

Chill
Your drinks land ahead of the wedding and we chill them, so nothing is being iced down in a tub while you are getting ready.
It depends entirely on where you buy. Some retailers take back unopened stock and some do not, so it is worth asking before you order, because the answer changes how much you are comfortable buying. It is not something Caoura Cliffs can arrange for you.
Where the money goes

The practical details
You supply the beverages for your wedding, with as much or as little help from us as you want. Nothing here is compulsory, and nobody is buying through a supplier they did not choose.
Alcohol at the wedding is served by appropriately qualified RSA staff through your approved caterer or bar provider, in line with the venue's current requirements. It's BYO, and it's never self-serve.
Glassware is included with the venue, and there's an ice machine on site alongside the commercial kitchen your caterer works from. Mixers and garnishes sit with your caterer or bar provider, and we confirm exactly who's bringing what during planning.

Yes. Couples supply the beverages for their wedding, subject to our current event, delivery and service requirements. Alcohol must be served by appropriately qualified RSA staff.
No. BYO here means the couple supplies the drinks for the wedding. Your guests aren't expected to bring anything.
No. Most couples buy their own drinks, and we help them get the list and the quantities right. If you would rather hand the buying over, your caterer or bar provider can often put a selection together for you. We share our recommended suppliers with couples during planning.
Yes. Personally owned and family-cellar wines can be worked into the plan, subject to sensible transport, storage, handling and service arrangements.
Yes, though older and valuable wines need more care: how they travel, how they are stored, how they are opened, whether they want decanting and who pours them. Raise those bottles with us and your caterer early rather than on the day.
Yes. Deliveries come to the property, and we chill them ahead of the wedding. Confirm the delivery window with us when the order goes in, so somebody is there to receive and check it.
